Pea and Courgette Frittata


Frittatas are a favourite party food here at Wild Child HQ! The egg-based dish acts as the perfect base for so many flavours and is so quick and easy to make. Delicious warm straight from the oven or cold as part of a picnic. This recipe is packed with protein and veggies, filling your little foodies with energy to help them make the most of summer!

 

Pea and Courgette Frittata

14 organic eggs

Half a courgette, thinly sliced

100g grams of peas

Pinch of paprika

Pre-heat your oven to 180 degrees ℃ and line a sheet pan with greaseproof paper

Scatter your sliced courgettes over a different baking tray and roast for 10 minutes

Whilst the courgettes cook, whisk your eggs in a bowl

Add the roasted courgettes, peas and paprika to the whisked egg mix

Pour the frittata mix into your lined sheet pan

Bake for 15 minutes, cooling before cutting into squares!
