Kale, Tomato & Bean Stew

This nutrient packed stew is high in protein, low in fat and packed with flavour and goodness. With only 6 main ingredients, this dish is inexpensive and very easy to cook, making it the perfect meat free Monday supper.
Kale, Tomato & Bean Stew
Served 2 hungry adults or 4 mini foodies
1 can of chopped tomatoes
1 can of cannellini beans
2 gloves of garlic
3 large handfuls of mixed kale leaves
1 red onion, finely diced
Olive oil
Place your onions in a large frying pan with a glug of olive oil on a low heat. Fry until translucent and soft, adding a little bit of water if the onions start to catch before they are cooked.
Next add your kale and garlic. After 2-3 minutes, when the kale begins to soften, pour in your chopped tomatoes.
Leave to simmer for 10 minutes until your kale is tender. Add your washed and drained beans and remove from the heat once they are cooked through. 
Once ready, spoon into individual bowls and grind on some black pepper.
Delicious served with crunchy bread and homemade hummus.
