Sweet potato mash is a great alternative to the traditional potato version, adding sweetness to your dish and beta carotene. Delicious on top of pies or simple as a side, this super easy recipe is a great way to mix things up.
2 sweet potatoes
2 large garlic cloves, peeled
Boil your potatoes and garlic until soft.
Once tender, drain the potatoes and transfer back into your saucepan. Give them a bit of a shake to get them fluffy.
Drizzle with olive oil and a generous grind of pepper, mashing until a smooth consistency.
Serve straight away or place back on the heat to warm up before you want it.
