This week's featured ingredients is one of our favourite vegetables and carbs, sweet potato! This orange veg is loved by adults and children thanks to its soft texture and sweet taste. Not only are they delicious, sweet potatoes are a high in Vitamin A and C and many other essential vitamins and minerals. The versatile potato is a great way to add sweetness to bakes, as your carb or just as a snack.
Sweet potato wedges
Feeds 2 as a side
1 medium sweet potato
Pre heat your oven to 180 degrees and line a tray with greaseproof paper.
Cut your sweet potato into even size wedges and spread over your tray.
Sprinkle with olive oil, paprika and pepper and use your hands to evenly coat all the wedges in the marinade.
Bake for 45 minutes, checking often till your desired crispiness.
