Featured Ingredient: Pumpkin


With eights day to go to Halloween, the WCK team are keen to make it an extra special one. As many families begin carving scry faces on to pumpkins, a shocking 18,000 tonnes of the squash inside will be wasted this year. Help us make a difference and don't throw that vitamin A rich goodness away!
Pumpkins are one of the lowest calorie vegetables and have absolutely no saturated fats or cholesterol. The veggie is loaded with antioxidants, fibre and is credited for its superpowers when it comes to protecting eyesight.
Pumpkin Muffins
These muffins are absolutely delicious! Moist and sweet thanks to the pumpkin and maple, they would also be great served during Thanksgiving. 

½ cup pumpkin puree

¾ cup gf flour

¼ cup oats

1 egg

½ tsp cinnamon

½ tsp baking powder

½ tsp ginger

½ cup maple syrup

½ cup coconut milk

¼ cup coconut oil

½ tsp vanilla

¾ cup sultanas

Preheat oven to 180 degrees

Mix everything in a large mixing bowl before spooning a tablespoon of the mix into each muffin case.

Scatter the top with pumpkin seeds or oats before baking for 15 minutes, till muffins are cooked through and bounce back to the touch.
