Although not strictly a vegetable, peas have been enjoyed for thousands of years thanks to their unique, sweet taste and nutritional value. High in protein and loaded with calcium and fibre, peas are a great way to get your little foodies eating healthy.
Green pea season in the UK runs from May to October, but can be enjoyed frozen all year round. Not only are they fantastic for our health, these little green balls are great for the environment, as they work with bacteria in the soil to ‘fix’ nitrogen from the air and deposit it in the soil reducing the need for fertilisers.
Using peas as the base for a guacamole is a great alternative to the original avocado version. Not only is it much cheaper, the sweeter taste and vibrant green colour of the dip is very attractive for our little foodies plus it will last in the fridge for a few days without browning.
1 cup of frozen or fresh peas
1tbsp of olive oil
1tbsp of lime juice
1tbsp of coriander
1tsp of ground cumin
Place all your ingredients in a food processor, blitzing till you reach your desired consistency. Add water to make the guacamole smoother and thinner.
Serve with fresh crudités and gluten free tortilla chips.
