Featured Ingredient: Apple

Now we are finally in September and the days are getting colder, we are very excited to start making use of all the delicious autumn produce! One of the many reasons the Wild Child Kitchen team love eating seasonally is because what is produced here in the UK at one time provides us with the nutrients we need during that season at that time. 
Crunchy, sweet, juicy apples are adored by children across the nation. Delicious on their own as a snack but also such a versatile ingredient, they are full of flavour and nutrients. A great source of phytonutrients and antioxidants, apples are believed to reduce the risk of cancer, diabetes and heart disease. Apples are also great for little foodies with bad tummies, thanks to its high fibre content.
Apple & Cinnamon Pancakes
Serves 2 little foodies
Every little foodies' favourite breakfast! These delicious, fruity pancakes are full of flavour whilst being vegan and free from gluten, dairy, refined sugar, nuts and salt. Due to all the liquid and puree, these pancakes are very soft once cooked, so don't worry about them being undercooked thats just the mix!
1/2 cup of ground, gluten free oat flour
1/2 cup of apple puree
1/2 cup of oat milk
1/2 banana, mushed
Half an apple, grated
1tbsp of coconut oil 
Pinch of cinnamon
Pinch of baking powder
Diced apple, sliced banana, goji berries and maple berries to serve
Add all your ingredients into a large mixing bowl, minus your topping, stirring till smooth and combined.
Heat a frying pan with a tsp of coconut oil till the oil starts to bubble. Using a tbsp, spoon your mix into round shapes, around 4 at a go.
Once the mix start bubbling, its time to flip your pancakes. Once brown, soft and slightly crisping on the edge begin to stack on a plate.
Continue till the entire mix has been used.
Stack your pancakes high and scatter your goji berries, diced apple and banana, before drizzling with maple syrup!
