Coconut Tzatziki

One of the many tasty dips that was invented in beautiful Greece! Delicious with crudités or served with grilled meat, tzatziki is quickly become a favourite here in the UK. With the original recipe calling for dairy yoghurt, we've decided to opt for coconut yoghurt to make it lactose free and offer its own unique flavour. 
Coconut Tzatsiki 
200g of coconut yoghurt
Half a cucumber
Handful of fresh mint, finely chopped
1 clove of garlic, crushed
Juice of 1 lemon
First grate your cucumber and place in a clean tea towel
Ring your tea towel to release all the excess water from the cucumber, then add to a mixing bowl
Add your lemon juice, coconut yoghurt, mint, garlic and pepper
Serve with a fresh ground of pepper and a sprig of mint
